Hummus by Myra Goodman
Makes 1 1/2 cups
1 3/4 cup cooked chickpeas (garbanzo beans), rinsed and drained if canned
3 tablespoons toasted sesame oil (make sure you get the toasted...it's not the same as non-toasted)
1/4 cup fresh lemon juice
2 tablespoons sesame tahini
1 garlic clove, peeled and minced (I used 2)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup chopped fresh flat-leaf parsley
1. Place the chickpeas, sesame oil, lemon juice, and 3 tablespoons water in a food processor or blender and puree until smooth. Add the tahini, garlic, salt, and pepper and puree until smooth.
2. Transfer the hummus to a pretty bowl and sprinkle the parsley around the edges. The hummus can be refrigerated, covered, for up to 1 week. Serve chilled or at room temperature.
